Sopressata - (aka Super Sod) Homemade hot salami that is handcrafted from premium pork with no soy protien unlike some competitors product. Sopressata features a low fat content and is aged to perfectiion.

Dry Cured Capocollo -(aka Lonza available in Red or Black) Homemade shoulder prosciuttio which is dried and salted in the old fashioned tradition. Our capocollo is not cooked. Seasoned to perfection for your enjoyment.

Red Capocollo - Calabrese Style - Hot seasoning sure to spice up any meal (Southern Italian Style)

Black Capocollo - Perusian Style - Seasoned with black pepper for a mildertaste (Central Italian Style)

Salemetti - Perusian Style - Our Salemetti is similar to Sopressata exceptit is seasoned with garlic and black pepper for a milder flavor. Salemetti can be considered a sweet style of Sopressata.

Dry curing involves applying the cure mix directly on the meat. Curing is done in the refrigerator. After curing, the meat is rinsed to remove the excess salt and then cooked. Dry curing is used in curing hams and bacon as well as smaller cuts of meat.
